Southwest Pasta Salad
Yield: Makes 4-5 servings
Ingredients

mayonnaise

dairy sour cream
|
|
1/4 |
cup |
chopped fresh cilantro
|
|

tablespoons |
milk
|
|
2 |
tablespoons |
lime juice
|
|

fresh jalapeno pepper, seeded and finely chopped
|
|
3/4 |
teaspoon |
salt
|
|

ounces |
radiatore pasta cooked, rinsed with cold water and drained
|
|

|
large tomatoes, seeded and chopped
|
|
1 |
|
yellow bell pepper, seeded and chopped
|
|
1 |
|
zucchini squash, quartered lengthwise and thinly sliced
|
|

green onions, thinly sliced
|
|
Directions:
In a large bowl, combine mayonnaise, sour cream, cilantro, milk, lime juice, jalapeno pepper and salt. Add pasta, tomatoes, yellow pepper, zucchini and green onions; toss to coat. Cover; chill to blend flavors.
